Sustainable vines, cellar-led patience

Vineyard decisions carried into the cellar
Jeff Strekas measures ONX Wines from vineyard to cellar, working as winemaker in Templeton after UC Davis training and a cellar path that began here in 2013. At ONX, the title is not only about tanks and barrels. His work also holds the director of winegrowing brief, which puts farming choices and finished wine in the same line of sight. That suits a maker whose first discipline was chemical engineering, followed by biochemical engineering in vaccine research and development before wine became the bench.
Jeff Strekas trained at University of California, Davis, then brought a scientific habit of measurement into Paso Robles cellar work. Science did not replace instinct; it gave him a grammar for watching change: fruit condition, fermentation movement, and the way a decision made in the vineyard keeps speaking after the wine has gone quiet in cellar. At ONX Wines, that continuity matters because the estate is framed around sustainable farming on 127 acres of certified sustainable vineyards in the Templeton Gap District. The hand is present, but so is the ledger.
A Paso Robles bench built for many grapes
The program at ONX moves across Grenache, Mourvèdre, Tempranillo, Cabernet Sauvignon, Malbec, Syrah, Petite Sirah, Sauvignon Blanc and Viognier, a set of varieties that asks for different cellar timings rather than one fixed recipe. The house works in still red, still white and still rosé, so the discipline is partly one of separation: keeping each lot legible long enough for blending decisions to mean something. Strekas’s background makes that kind of patience feel practical, not ornamental.
The estate’s stated philosophy is sustainable, and the scale is boutique. Those two words can grow vague in less careful hands, but here they sit beside the visible facts of the property: certified sustainable vineyards, an estate in the Templeton Gap AVA, and a hospitality rhythm that keeps visitors close to the vines rather than treating the vineyard as scenery. The wines come from a place where Rhône and Bordeaux varieties share the same working map, along with Tempranillo and aromatic whites. That mix requires a winemaker to read ripeness, structure and lift without forcing sameness onto the cellar.
Light, metal, vineyard air
The ONX tasting room in Tin City keeps a rustic industrial register: metal, open space, natural light, and enough room between counter and table for the conversation to stay at cellar volume. Indoor and outdoor seating change the pace of the tasting, but the place does not lean on spectacle. It gives the wine air, then lets the vineyard supply the rest. The estate side carries a different texture, with vineyard views, picnic areas, and English cottage-inspired accommodations set among the vines.
That split between Tin City and the estate gives ONX two working rooms: one urban and bench-side, one slower and field-facing. Strekas’s role connects them. The glass may be poured at the counter, but the argument begins in the 127 acres of certified sustainable vineyards.
