    Tomato, cream, basil, shaved parmigiano

The Panna pizza leaves the bench with tomato sauce, cream, basil, and shaved parmigiano; Craig Stoll, chef-owner and co-founder of Pizzeria Delfina in San Francisco, has kept that Cal-Italian directness close to the work. His early time as a prep cook at Continental Italian restaurant in the suburbs of New York sits behind the present role less as résumé than as habit: prep, repetition, scrutiny, the nightly correction of a dish before it reaches the room. At Delfina, his most famous dish is spaghetti with tomato sauce. At the pizzeria, that same argument moves through dough, tomato, cheese, sausage, clams, greens, and heat. The pleasure is plain, but not casual in its making.

A small room built around heat

The method here is Neapolitan-inspired rather than museum Neapolitan. San Marzano tomatoes, fior di latte mozzarella, housemade fennel sausage, sea salt, basil, cream, shaved parmigiano, cherrystones or cockles, hot peppers, oregano, pecorino, and green garlic all have their places in the program. The Margherita DOP asks for restraint. The Salsiccia lets the sausage carry fennel, tomato, bell peppers, onions, and mozzarella across a crust that needs chew at the rim and enough structure at the center. The Clam Pie works differently, with small shellfish, heat, and salinity against char. The Panna is the house gesture many regulars read first: tomato and cream, basil and parmesan, a pie that could turn heavy if the hand lost its measure. Seasonal antipasti and piatti move around the pizzas rather than pulling focus from them. The approach is traditional in outline, California in sourcing, and exacting where it matters most, at the oven mouth and at the pass.

    The counter catches the neighborhood

The Mission District room is busy, airy, and close to the work. It began next door to Delfina, and that adjacency still matters: the pizzeria feels less like a spin-off than a station with its own tempo, smaller, louder, more immediate. The counter takes on the rhythm of a neighborhood place, with pies moving from heat to table while the room holds the smell of tomato, browned crust, fennel sausage, and roasted chicken. Indoor seats keep the action near; outside tables let the meal spill into 18th Street. Service stays warm without turning ceremonial. It is an upscale casual room in the useful sense, attentive to craft without asking the pizza to behave like a formal course.

After the remodel, the ovens stayed in the story

When Delfina reopened in 2022 after its remodel, the pizza ovens were relocated and to-go service continued at the site. That decision says much about the place: the pizzeria can flex, but the dough program and the neighborhood’s appetite for it remain part of the address. The house has grown beyond the first Mission District room, yet this is still where the original 600-square-foot idea can be read most clearly, in the Panna pizza.
