    At the open kitchen, István Pesti directs the pass as Executive Chef of Platán Gourmet in Tata, sending a 12-course menu into the barrel-vaulted cellar beneath Tata Castle. His station sits inside the Platán Manor complex, in former servants’ quarters of the Esterházy estate, rebuilt for fine dining after work completed in 2009.     Pesti arrived with a Budapest formation, a graduation from Gundel Károly Vendéglátóipari és Idegenforgalmi Technikum, and a sequence of head-chef posts that included Cosmo, Babel, and Tanti before his work at Platán. Here he has made the rural address carry a city-level discipline without losing the scale of the place. Platán Gourmet became the first rural Hungarian restaurant to earn two Michelin stars in November 2022, and the distinction belongs to this house, not to an inherited mythology. Pesti also oversees Platán Bisztró within the same complex, but Gourmet is the cellar, the tasting menu, the formal pass.

    Twelve courses, garden memory

    The menu works as a degustation rather than a card, with the full 12-course sequence moving from aperitif and snacks at the Chef’s Table into the cellar. Pesti’s method holds Hungarian memory close, then lets other techniques enter without making a costume of them: French structure, Swedish restraint, Japanese precision, Asian and garden notes, vegetables and herbs from Platán’s own garden when the season gives them. The restaurant changes the menu quarterly, following garden and forest cycles rather than a fixed set of signatures.

    The cooking here depends on progression. Snacks set the first register, then the room narrows around the bench-side work of plating, scent, texture, and temperature. Platán publishes the architecture of the menu rather than individual dish names, with a tasting format, a curated wine program, juice pairings for guests who want them, and a kitchen that keeps harmony as a technical problem rather than a decorative one. The Michelin Guide’s 2025 assessment still holds the restaurant at two stars.

    A cellar with a calm line

    The room does not behave like a castle set piece. Its barrel vaults do some of the theatre, but the kitchen sets the tempo: quiet, efficient, formal without stiffness. Guests sit close enough to read the pass as labor, not performance. Plates leave under the curve of the cellar, service folds in with the wine program, and the tasting menu gathers its pace course by course.

    Outside, the complex opens toward Tata’s Old Lake and the route between Tata Castle and Esterházy Castle. Inside Gourmet, that landscape arrives in smaller measures: garden herbs, seasonal turns, the manor’s restored fabric, the old estate’s proportions. The house has collected Dining Guide’s Countryside Restaurant of the Year in 2021, the Michelin rise by 2022, and its current two-star standing, but the better close is still the same pass beneath Tata Castle, where Pesti’s 12-course menu leaves the kitchen.
