    With a quiet plate, the work at Pompette in Copenhagen begins with natural wine, then moves patiently through the room toward the counter. The feeling stays restrained and close: a plate kept quiet, a glass in mind, and a way of working that lets Pompette’s counter become the place where it all settles.

    The kitchen has to move with the cellar rather than merely feed it, and no chef is named to the public. The bar may be known first for bottles, but the food still needs hands, timing and a clean sense of proportion. Glasses run around 50 to 75 DKK, and any bottle from the shelves can be opened in the room for a 100 DKK corkage.

    Pompette was founded in 2018 by Martin Ho and Jesper Emil Norrie as a natural wine bar and shop on Møllegade in Nørrebro. The program stays close to that first decision: bottles on shelves, wine by the glass, and the option to pull something from the wall and drink it in the room. The selection moves through red, white, rosé, orange, and sparkling wines, with the back bar treated less as display than as a working cellar for the night.

    The kitchen has to be built for that pace. Burrata can carry acidity. Ricotta and anchovies need texture and salt. Hafod cheddar, goat cheese, Saucisson Pays Basque, sardines escabeche, bread with olive oil, olives, and nuts give the bar a set of small, cold dishes that behave like cellar tools: fat, brine, crunch, lactic depth, a little smoke or cure when the bottle calls for it. Leeks vinaigrette is a dish of cut, dressing and patience, not a plate trying to outrun the wine.

    The room keeps its materials plain. Rough plaster walls, wooden stools, bottles within reach, and a counter that makes the service feel bench-side rather than staged. The room reads Nordic meets Parisian, and Nørrebro comes through in the ease of it: people stop in for a glass, choose a bottle, ask the staff to pull something toward their taste, then settle into the room with cheese, olives or sardines beside them. The place can fill quickly, but the format holds because the work is compact, and the doors stay open from noon to midnight every day of the week. A glass, a plate, a shelf, a recommendation.

    A wine bar does not give the kitchen much cover; seasoning meets the glass at once, and a loose dish has nowhere to hide. The measure of the station is the small plate placed next to a bottle from the shelf. At Pompette, that measure can be as direct as ricotta with anchovies on Møllegade 3.
