Lots chosen before the cellar waits

Arnaud Weyrich selects only a portion of the finest wines for cask as winemaker at Roederer Estate, Champagne, working in Philo in Anderson Valley. The decision is annual, quiet, and binding: the chosen wines go into large French oak casks of 1,400 to 1,900 gallons each, where aging becomes part of the blend’s architecture rather than an afterthought. Weyrich’s route to that station began with French oenological training at Ecole Supérieure d’Oenologie, Montpellier in 1993, then an internship at Roederer Estate from 1993, where the lessons of sparkling wine moved from classroom to cellar. He returned as assistant winemaker from 2000, after quality control work in France had sharpened his sense of standards, evaluation, and repeatability. Until 2002, he worked in Reims as Chief Technical Officer in charge of development for Champagne Louis Roederer. Since 2002, he has been winemaker and Vice President of production at Roederer Estate, holding together French technical discipline, Anderson Valley fruit, and the long patience of méthode traditionnelle.

The production boundary is clear: Roederer Estate works from grapes grown exclusively on the estate, with Pinot Noir and Chardonnay carrying the sparkling program in Anderson Valley. Weyrich’s role is not to chase a single gesture in the cellar, but to repeat a series of discriminations until the base wines have a path. He tastes, separates, protects, develops, and assigns. Some lots remain direct; some earn time in large French oak. That cask program gives the cellar another register of texture and seasoning without moving the wine away from its estate origin. The house’s best-known bottles, including L’Ermitage, L’Ermitage Rosé, Anderson Valley Brut, and Roederer Estate Brut Anderson Valley NV, sit inside that method: estate-grown grapes, selection, aging, and the pressure of delayed judgment. The 2019 L’Ermitage Brut received a 100-point score from Wine Enthusiast, a number tied to one wine and one vintage, not a substitute for the work that preceded it.

Fog, redwoods, and the tasting room

The cellar work happens in a cool-climate Anderson Valley setting, with vineyard rows held by fog-shrouded hills and redwoods. In the redesigned hospitality center, the room stays quiet enough for the wine to lead the conversation. The view is not decorative; it gives the visitor the same boundary the cellar observes, estate fruit in a valley shaped by cool air, slope, and time. The tasting room carries the French house lineage without making a costume of it. Glass, counter, vineyard, redwood, and bottle do the speaking. For a sparkling wine house, that restraint matters. The wines have already spent their time under pressure, in selection, in cask, and in the discipline of release.

Roederer Estate’s next measure remains the same cellar act Weyrich describes each year: choosing which wines deserve the long path. Follow the casks, because the house’s patience gathers there before it appears in L’Ermitage.
