Giant woks work over wood-fired braziers, where wok hei is not a menu word but a temperature, a breath, and a narrow window. The kitchen still turns out sweet and sour pork in a yam basket, handmade crab balls, cold jelly chicken with jelly fish, and flat chicken, with prawn or fish paste worked into chicken skin before frying. Rice is steamed the old way in metal bowls, which leaves the grains loose rather than packed. None of this is difficult because it is decorative. It is difficult because the method was built for labor, family tables, and volume, and the shortcuts change the dish.

Together the operation now spans five shoplots, with the original non-air-conditioned address and the air-conditioned address sharing one kitchen and one menu. Food moves between them. Plastic chairs sit under the hum of service, tables fill with duck and soup, and the mood stays family rather than polished. The kitchen is part of the texture: cavernous, hot, organized around braziers, ovens, and woks large enough to make the room feel secondary to the fire behind it.
