Service held to a clean line
The seasonal meeting comes before the plate. Chef Hugo Moran leads Sexy Fish Miami in Brickell, Miami, by gathering his chefs around what the coming season can carry, then asking the kitchen to keep the finish clear. His path suits that kind of room: Le Cordon Bleu, Florida International University, line work at Talavera, a Sous Chef post at Abokado, and later Sous Chef work at Zuma Istanbul. He also holds Sous Chef roles with ZUMA Restaurants and Siegelman Investments, a spread of responsibility that reads less like restlessness than time under pressure.
At this station, Moran works inside a restaurant built for seafood, sushi, sashimi, Robata-grilled meats, and the small-plate tempo of shared dining. The cooking is Asian and Japanese, seafood-forward, bold in flavour, and clean-lined in finish. That last part matters. In a room with music, art, and theatrical lighting pressing toward the plate, the kitchen still has to send out food with edges intact: fish kept moist, tempura held crisp, sauces placed for tang, smoke, or cream rather than noise.
Seafood, Robata, and the shared pass
The menu’s architecture gives Moran a narrow discipline to work through: à la carte, tasting formats, sushi, sashimi, seafood, fish, and Robata. The Sekushi platter sits among the signatures, as does sea bass, while Moran has named whole baby chicken with chickpeas and yuzu as one of the restaurant’s signature dishes and a favourite with guests. It is a useful detail because it shows how the kitchen measures itself: not only by the obvious seafood program, but by a dish that has to hold tenderness, acidity, pulse, and heat in one pass.
Seasonality here is not treated as ornament. Moran has described the method plainly: “We usually gather a meeting with our chefs and speak about the upcoming season and how best to celebrate seasonal ingredients.” The gesture is practical. Plan first, align the station, then let the service test the decision. In a large restaurant with an energetic room, that kind of repetition is not background labour. It is the method that keeps a plate composed when the room is moving faster than the bench.
The room under the fish
The dining room was designed by Martin Brudnizki Design Studio, with an underwater world rendered through mid-century glamour, bright marine fantasy, and art by Damien Hirst, Frank Gehry, and Michael Roberts. The effect is not quiet. The bar pulls focus, the music rises, and the room carries a club-like pulse, especially when the night turns toward DJs, sirens, and dancers. It asks more of the kitchen, not less.
There is also the private Rainbow Reef room, with illuminated agate flooring, blue silk panels, coral leather seating, a live coral fish tank, and a screen to the main hall. Those materials can swallow weaker cooking. Moran’s task is to keep the hand visible against them: tempura batter, sliced fish, yuzu, sea bass, and the Sekushi platter moving from the pass into Rainbow Reef.
