From harvest timing to house style

Harvest timing, blending, and the daily cellar call sit with Germán Lyon, Technical Director and Head Winemaker at Viña Pérez Cruz in Paine. He has held that post since 2001, carrying the technical direction from the outset rather than inheriting a finished house style. In a winery, that continuity matters because every season leaves its mark on the next: the pick date, the ferment, the barrel decision, the blend that stays quiet until it is ready to be judged in glass.

Lyon trained at the Pontifical Catholic University of Chile and at the National Superior Agronomic School of Montpellier. The education shows here as method, not display. Viña Pérez Cruz asks for a winemaker who can hold Cabernet Sauvignon, Carmenère, Syrah, Petit Verdot, Malbec, and Cabernet Franc inside a disciplined red-wine program, while keeping the estate’s Maipo Andes identity legible. Since 2012, Lyon has also been winemaker and co-founder of LOF, but Paine remains the central post in his practice. His signature wines here include CHASKI, LIGUAI, QUELEN, Limited Edition Carmenere, and Winemaker's Selection.

Gravity through the Andes foothills

The winery works from an estate setting of 250 hectares of vines in the Andes foothills, on rocky alluvial soils in Maipo Andes. The house describes its production philosophy as sustainable, and the building supports that method through gravity-flow production rather than a cellar arranged only for spectacle. The scale is boutique, though the house also states production at over 1 million bottles a year, a useful tension between range and control.

The architecture gives the cellar its own working logic. Barrel-shaped naves, Inca-inspired stone bases, and wooden elements that recall wind-bent trees make the building feel tied to the site rather than placed on top of it. For the winemaking team, that structure is not only visual. Gravity changes how fruit and wine move through a winery; fewer forced transfers mean the layout itself becomes part of the method. The red program rests on that combination of estate fruit, controlled movement, and the repeated decisions that Lyon has kept in hand since the beginning.

Light above, quiet below

During tasting, the first impression is light: the winery draws natural brightness across wood, stone, and the line of the naves. Beyond the tasting room, the cellar turns calmer. Underground, the barrel room keeps a naturally controlled temperature, and the sound drops to the level of glass, footsteps, and the small movements of cellar work.

The setting does much of the speaking. Vines run across the foothills with the mountains close behind them, and the building’s curves pick up the same pressure of wind and slope. This is not a room built to hurry a visitor through a flight. It is a place where the cellar, the vineyard, and the tasting room stay in close conversation, with Lyon’s red-wine program moving between them. CHASKI, LIGUAI and QUELEN are the names that keep returning to the glass.
