    Qvevri wine below Liberty Square

A founder keeps the cellar close to the makers

The bottle opens at the table, not at a distant service station. John Wurdeman, founder and winemaker at Vino Underground in Tbilisi, built the bar as an extension of his work with Georgian natural wine. He co-founded Pheasant's Tears in Kakheti in 2007, then founded Vino Underground in 2010, carrying the same discipline from vineyard and cellar into a room where the maker can stand near the glass.

His role here is not dressed as theatre. The through-line is practical: natural wine, qvevri fermentation, indigenous Georgian grapes, and a list shaped around producers who work close to their fruit. Vino Underground has been described as the first Tbilisi bar focused solely on this kind of wine, and its place in the city rests on that narrowness. The bar does not try to behave like a broad international cellar. It stays with Georgian bottles, with amber wines, dry reds, organic and biodynamic growers, and the occasional variety a drinker may not have met before.

    Qvevri wine by the flight

The program turns on qvevri-fermented Georgian wine, poured with enough context for the method to remain visible. Tastings commonly move through flights of four wines, often amber and red, giving the glass time to show skin contact, clay, grape, and cellar decision in sequence. The point is not volume. Staff open bottles to meet a drinker's taste, and the bar can work from a wide set of already-open options while still keeping the conversation close to the bottle in hand.

That matters with wines that can be angular, savory, tannic, cloudy, or quietly lifted, depending on the grape and the hand behind it. The list reaches toward small wineries, organic and biodynamic producers, rare varieties, and Georgian names that rarely travel through supermarket shelves. Jgia appears in accounts of the bar as one of the grapes that can turn a tasting away from the expected. Chacha sometimes enters the broader conversation, but wine remains the center of gravity. The method asks for patience from the drinker as much as from the maker.

    Brick, vault, back bar

The room sits below street level near Liberty Square, with brick walls and vaulted ceilings doing part of the work before anyone speaks. It is intimate when the room is quiet, more unruly when the night fills, but the scale stays cellar-like. Glasses gather on small tables. Bottles stand close enough for labels to become part of the exchange. The back bar reads less like display than working inventory, a set of decisions waiting to be opened.

Service here is casual, but the knowledge is bench-side in spirit. A pour can become a map of Kakheti, a correction of assumptions about orange wine, or a reminder that qvevri is not a costume for modern natural-wine taste. It is a vessel, a method, and, in Georgia, a long argument with time. A Georgian qvevri wine in a glass sits at Vino Underground.
