Dr. Klaus-Peter Heigel has held responsibility here since 2015, carrying production from vineyard to cellar and shaping the quality of the wines through each linked stage. His remit is not a narrow cellar post. It asks him to read the crop, the season, the estate’s scale, and the final bottle as one sequence.

Before Iphofen, Heigel founded and led Weingut Dr. Heigel in Zeil am Main, Unterfranken, until 2018. That earlier estate work matters here because Hans Wirsching is a house of continuity: a 14th generation family estate at the foot of Schwanberg, working within Franken and known for Silvaner and Scheurebe as much as for the discipline of dry white wine. Heigel’s place at the bench is therefore both technical and custodial. He keeps the method aligned from parcel to cellar, with quality as the measure that decides when to move and when to wait.

Ninety hectares on gypsum Keuper

The program at Weingut Hans Wirsching begins with 90 hectares of vineyard on gypsum Keuper soils, a base that gives the cellar its vocabulary before a tank is filled. The estate works sustainably and at a medium scale, with annual production given as 600,000 bottles. Within that volume, the focus stays clear: still white wines from Franken, built around Silvaner, Riesling, Scheurebe, Pinot Blanc and Pinot Gris, with Pinot Noir also in the estate’s range.

Silvaner carries particular weight in this part of Franconia, where shape, acidity and dry extract matter more than surface perfume. Scheurebe has its own history at the estate, named in the house’s standing as a pioneer for the variety in the region. Heigel’s work is to keep those identities legible without loosening the whole. Vineyard timing carries into pressing, fermentation and cellar handling; the cellar cannot repair what the vineyard did not give. That is the discipline of the place.

The vaulted cellar and the quiet pour

The tasting room sits within a historic vaulted cellar, family-owned in feeling rather than theatrical in manner. The room is quiet. Service is personal and knowledgeable, the kind that lets a glass of dry white stand in front of the guest long enough for the soil and the method to become the subject. The setting at the foot of Schwanberg gives the estate its view, but the cellar gives it its pace.
