Over 100 hectares of organic vineyards set the scale for Leo Hillinger, winemaker at Weingut Leo Hillinger in Jois. He works at a house built around estate, cellar, and market as one discipline, close to Lake Neusiedl and within the Leithaberg frame. Since 1990, Hillinger has carried forward his parents' wine business, not as a preserved inheritance but as an active station: owner, developer, winegrower, and the person whose name sits on the bottles. The training chapter he completed in Germany belongs to the same line of work, a practical formation before the long responsibility in Jois.

The winery around him is modern in both architecture and intention. Its glass, clean lines, and state-of-the-art facilities do not read as ornament here; they give the production and tasting life of the place a single language. Hillinger's own phrasing keeps product and reception tied together: “I have a very good product and very good marketing; a bad product with good marketing leads quickly to collapse.” It is a blunt standard for a large organic estate, where scale only holds if the wine keeps faith with the ground.

A Leithaberg cellar with range

The program at Weingut Leo Hillinger moves through Grüner Veltliner, Sauvignon Blanc, Zweigelt, Blaufränkisch, Pinot Blanc, Merlot, still white, still red, still rosé, and sparkling wine. The house's named signatures include HILL1, Hill 1 Red, Pinot Noir Terroir, Pinot Noir Eveline, and Grüner Veltliner Leithaberg DAC. Taken together, they show a cellar arranged by both identity and breadth, with Leithaberg sitting beside international varieties and Burgenland reds.

What the estate states most clearly is its organic basis and its sensory ambition. Hillinger describes wine as “Not only to drink the wine, but also to live it, to feel it, and to experience it with all our senses.” That is not a technical recipe, but it does locate the method's pressure point: the bottle must carry touch, scent, memory, and place, not simply varietal correctness.

The tasting room beside the vines

The atmosphere at the winery is quiet, polished, and contemporary, with the tasting room set into a broader architectural idea rather than separated from it. The setting matters. Vineyards surround the building near Lake Neusiedl, and the room keeps that proximity visible while the work of tasting slows down to glass, color, aroma, and finish. This is not a cellar staged as nostalgia. It is a working estate using modern design to make its discipline legible.

At the bench-side level, the strongest impression is alignment: organic farming outside, a modern cellar inside, a portfolio built to carry both Austrian varieties and international references. The visitor meets the wine through the cave tasting format, but the more concrete encounter is with names already fixed in the house's vocabulary: HILL1, Hill 1 Red, and Pinot Noir Terroir.
