The method reaches back to Qingping Restaurant, the now-defunct Guangzhou address where this founder and kitchen team previously worked, and from which the Yixin preparation takes its name. The discipline is narrow and old: chicken, cut cleanly, served with ginger and scallion, carried to the table before it loses the texture the kitchen worked to hold.
A white marinade with dried scallops
Yixin chicken is the center of the program, not a dish among many equals. The point is not browning, smoke or sauce weight. It is the Cantonese problem of poaching: heat firm enough to set the bird, gentle enough to keep the meat silky, timed so the skin remains glistening and elastic rather than slack. The flavor is meant to travel to the bone. Ginger and scallion do the finishing work at the table, sharpness against fat, fragrance against the clean taste of the bird. Wen Ji Yixinji expanded in 2020, adding a two-storey dining room across from the original shop, but the place still reads as a small local address rather than a room built for ceremony. Tables turn around shared plates. The counter handles dine-in and takeaway with the same chicken at the center of the exchange. Polished wood and soft light soften the renovated room, while the service remains casual and direct. Noise stays conversational, helped by the kind of ordering rhythm that comes when most tables already know the first dish. A half bird arrives, then soup, ribs, rice tea, or osmanthus roll. Waits of around 30 minutes are common at peak times.

Wen Ji Yixinji holds Michelin Bib Gourmand recognition in the Guangzhou guide, including the 2024 and 2025 editions, for Cantonese cooking judged on quality and value, one of 16 recognised spots in Liwan District.
