i. Biography
Born in Iceland and raised in Reykjavík, Aggi Sverrisson has said, “I didn’t have a clue what I wanted to do in my life.” In the trade, that kind of uncertainty only matters if it survives the first service; his path did not. What followed was a measured ascent through European kitchens where timing, pressure, and standards do the sorting, and where each move added another layer of control to his work.
The Climb
Early in the career, Aggi Sverrisson worked as cook at one of Reykjavik's most renowned restaurants and hotels in Reykjavik, Iceland, a first station in the discipline of volume, pace, and consistency. In 2001, he moved to Léa Linster in Luxembourg as Sous Chef, where the brief would have required composure and exacting coordination. By 2002, he had stepped up again, becoming chef at Le Manoir aux Quat'Saisons in England, then returning there as Head Chef from 2005–2007. The pattern is clear: advancement earned through repetition, pressure, and responsibility taken on in sequence. That progression brought him back to Iceland, where he became Head Chef at Moss in Iceland, a role that would become central to his working identity. Alongside that, and then beyond it, he established Texture as founder / chef (since 2007), while also serving as Executive Chef of The Retreat at Blue Lagoon Iceland. Read together, those titles map a career split between execution and authorship, with the same exacting hand running through both.
Today
He is also Head Chef at Moss in Grindavík. Moss is the clearest expression of his approach: a kitchen where the surrounding environment is not decorative, but part of the framework the cook works within. The result is a style that reads as controlled, place-aware, and built around focus rather than flourish.
