Agustín Ferrando Balbi is an Argentine chef and founder of Andō in Hong Kong, a Michelin-starred restaurant that fuses Spanish, Italian, and Japanese cuisines. Born in Ramos Mejía, Argentina, to a family of Spanish and Italian immigrants, Balbi was inspired by his grandmother Lola to pursue cooking at age 15. He trained at The BUE Trainers in Argentina and worked under chefs including Thierry Pzonka in Buenos Aires and Scott Boswell in the United States, before spending five years honing his craft in Japan at prestigious establishments including Nihonryori Ryugin and Cuisine[s] Michel Troisgros, where he was named one of Japan's top 10 young chefs under 30 in 2015.
