Alex Cordobés is the founder and face of ALEX CORDOBES, a Madrid-area pastry brand centered on Basque-style cheesecake, with its production site in Las Rozas de Madrid and a retail presence in Madrid and Las Rozas. In 2021, *El País* reported that he began making cheesecakes at his parents’ home, selling them through Instagram before moving into a dedicated workshop in BurgoCentro, Las Rozas.
