A Michigan native, Cuper got his start working within the Chicago wine scene before joining chef-owner John Manion's hearth-focused dining room at El Che in 2019. Working alongside Manion—whose culinary perspective was shaped by Brazilian live-fire cooking traditions blended with Midwestern produce—Cuper directed the beverage program to complement open-flame cookery. Over Thanksgiving 2020, during the dining room's temporary six-month pandemic closure, Cuper overhauled the list with a strict geographic mandate.
