The Climb
Study, observation, and sustained attention sit at the center of Alice Waters’s work. At the University of California, Berkeley, and at Montessori school in London, she formed a discipline of looking closely, then carrying that discipline into Chez Panisse, which she founded and has owned in Berkeley, California, since 1971. The restaurant was built around a practical proposition with cultural reach: food could be a place where beauty, awareness, and taste are trained together. Chez Panisse became influential because it held that line over time. Under Waters’s ownership, the restaurant moved beyond Berkeley into the wider American conversation about how food is grown, cooked, and valued, while keeping its original purpose intact. The scale of that influence came from consistency: the work did not drift from the founding idea, and the idea remained legible in the room, on the plate, and in the way the restaurant was understood.
