Amarilys Colón

Amarilys Colón is the Executive Chef at La Padrona, the Italian restaurant at Raffles Boston in the Back Bay, where she collaborates with Jody Adams on regional Italian cuisine. Prior to La Padrona, she was the executive chef at Porto in Boston and built her kitchen career in the Boston area, including roles at Vicki Lee’s in Belmont, where she advanced from front-of-house management into the kitchen and later to sous chef and executive sous chef. Her work at La Padrona has centered on handmade pasta and dishes inspired by Italian regional traditions, including toasted semolina pasta with vegetable ashes and Barnstable clams.
