The Work Today

Vineyard work sets the terms before the cellar. At Domaine Berthaut-Gerbet, Amélie Berthaut follows lutte raisonnée farming with a strong leaning toward organic viticulture, uses no herbicides or pesticides, and has moved the vineyards to organic viticulture, while the estate is sustainable with organic methods and not currently certified organic. Most wines use roughly 20–40% whole bunch, with whole-cluster inclusion depending on the cuvée; changes under her direction include increased stems, more delicate extraction, and 0–30% new oak in traditional Burgundy barrels depending on the wine. The vinification is built around indigenous or ambient yeast fermentation, 12–15 months of barrel aging, no fining, some filtration, minimal SO2 after harvest and malolactic fermentation, and barrel or foudre aging. The register is kept away from weight: the wines are described as having great purity and finesse, and the 2021 house style is fresh, vivid, lightly extracted, and avoids darker, heavier wines.
