i. Biography
The Path
Training across McGill University, Harvard Business School, MIT, and Cornell University gave Amy Wallace Cowan a business framework that later carried into ownership. The roles that followed moved through strategic marketing, Corporate Development, consulting, co-founding, and facilitation, with work at NBCi Inc. (2000–2001), Bell Video Group (2004–2006), RedStar Entertainment (2006–2009), Cowan Roberts LLP, and management consulting & corporate facilitation (2013–2021) before MavenChain (2022–2023). Today, that portfolio sits alongside hospitality and retail ownership in Oak Cliff and beyond. The same operator behind Oddfellows is also listed as Associate Broker at Gibson Sotheby's International Realty (since 2018), director of Business Development at Chillwall AI (since 2023), and owner of AJ Vagabonds and Revelers Hall.
The Work Today
The room reads on restraint: clean bones, a timeless style, and no extra period dressing. In Amy Wallace Cowan’s words, the brief was not to stage an old-world deli, but to build something with a lighter hand.
In Their Words “We wanted clean bones and kind of a timeless style.” “A lot of delis feel like they're 100 years old.”
Acclaim
That same clean-boned approach defines the work at Oddfellows: direct, current, and built to avoid the weight of borrowed nostalgia.
