Benjamin Collombat

Benjamin Collombat is a French chef who became executive chef at Château de Courcelles in Courcelles-sur-Vesle in January 2024, where he was put in charge of the restaurant gastronomique La Table de Courcelles, the Orangerie, and the planned Bistrot de la Vesle. Before that, he led the culinary program at Château de Berne in Flayosc/Lorgues, where his restaurant Le Jardin de Benjamin earned a Michelin star and a Gault&Millau Innovation Prize, and where he also oversaw the property’s other dining venue.
