The Climb
École Hôtelière Ferrandi gave Benoît Charvet a structured base in the habits pastry work asks for: rigor, finesse, and control at service pace. That training is reflected in the early move to Potel & Chabot as an apprentice pastry chef, where the bench comes before the title and the demands of high-end hospitality shape the work before any public recognition does. The progression that follows is a steady one, each position widening the scope of the craft without changing its terms. At Relais Bernard Loiseau in Saulieu, where Charvet became chef pâtissier from 2006, the work required precision and sensitivity in equal measure. By 2014, as executive pastry chef at Georges Blanc Group in Vonnas, the remit expanded from an individual station to the pastry direction of a larger house. Later, at Paul Bocuse Le Restaurant, pastry sat inside a restaurant carrying major weight in French gastronomy, which meant the sweet course had to answer to the same standards as the rest of the meal. Read together, those addresses map a career shaped by exacting rooms rather than easy credit. Each one asks a different version of the same thing: control, timing, and the ability to keep a dessert clear in form without flattening it.

In a house of that kind, the pastry section has to close the meal cleanly while still leaving room for pleasure at the end. The work is technical, but the effect has to land as a last note that feels complete.
