The Path
An internship at Champagne Castelnau in 2003 placed Carine Bailleul inside the house early, before the role of Chef de caves was ever part of the picture. Those first years meant close exposure to the routines that govern a champagne estate, where each decision has to be made with restraint and exact timing. She returned to Champagne Castelnau in 2021 as Chef de caves, bringing her work at the house back to its starting point and into its most demanding position.
The Work Today
Since 2021, Bailleul has led the cellar as Chef de caves, overseeing the slow and exacting transformation of wine beneath ground level. The work depends on how texture, tension, and depth are assembled over time, not pushed into place at speed. As she puts it, “While winemaking techniques shape the structure of a wine, its liquid soul is gleaned in the obscurity of the cellars through prolonged lees-ageing.” That line captures the terms of the job: structure is one thing, but the wine’s expressive centre is formed in darkness, stillness, and duration. The craft here is to keep that process balanced, so the cellar can do its work without being forced.
