Christian Irabién is a Mexican American chef and the chef-owner of Amparo Fondita in Washington, DC. The Amparo Fondita team page says he was born in Chihuahua, Mexico, raised in Mexico and the United States, and has a culinary background spanning the U.S., Mexico, Spain, and France. Washingtonian identified Amparo Fondita as his long-running modern Mexican project after a series of pop-ups, and Michelin describes the restaurant as a stage for his ingredient-driven cooking.
