Christian Irabién is a Mexican American chef and the chef-owner of Amparo Fondita in Washington, DC. Mexico, Spain, and France. Washingtonian identified Amparo Fondita as his long-running modern Mexican project after a series of pop-ups, and Michelin describes the restaurant as a stage for his ingredient-driven cooking.
