i. Biography
Christophe Dufossé, born in Calais, France, trained at Lycée Hôtelier de Guebwiller before working at prestigious establishments including Alain Ducasse’s Louis XV in Monaco, Paul Bocuse’s restaurant in Lyon, L’Eden Roc in Antibes, and Byblos des Neiges in Courchevel. He earned his first Michelin star at age 29 as Head Chef at Relais & Châteaux Royal Champagne in Epernay, followed by roles at Domaine de Roncemay in Bourgogne and opening La Citadelle's Le Magasin aux Vivres (later La Table) in Metz in 2005, which retained a Michelin star. In 2021, he and his wife Delphine took over Château de Beaulieu in Busnes, Hauts-de-France, where the restaurant earned a second Michelin star.
