Restaurant service was the first discipline. As sommelier at several of Budapest’s top restaurants from 1990, Csaba Malatinszky worked in a setting that demanded technical palate work, timing, and a steady hand in the room. From that base, he moved into winemaking, carrying the precision of service into cellar work.
Where They Are Now
Since 1997, the dual role of winemaker and owner at Malatinszky Winery in Villány, Hungary has given Malatinszky direct control over both production and direction. Those two responsibilities are not separate in practice; they set the framework for the wines and the way they are shaped vintage to vintage. Cabernet Franc is the clearest expression of that focus. Noblesse Cabernet Franc 2008 is the reference point, and the gold medal it received at Decanter in London in 2008 gives the wine a fixed place in the record. The line from Budapest sommelier in 1990 to Villány winemaker and owner from 1997 to an internationally recognized Cabernet Franc in 2008 is compact, but it marks the arc of the work clearly. The stated philosophy is brief: “Without beauty, life is meaningless.” In trade terms, that puts the standard on the work itself. Beauty is treated as a working requirement, not an accessory, and the wine becomes the place where that standard has to hold.
