Owner-chef of TACUBO in Tokyo, Daisuke Takubo works Wood-fired Italian cooking through flame, timing, and ingredient selection. The method is exacting, but the discipline begins earlier than the fire: at market, in the judgment of what is worth bringing into the kitchen, and in the restraint required to let that choice carry through to the plate. From 2006 to 2010, he was chef-owner of Ristorantino Barca in Hiroo, Tokyo. Having his name on the door made authorship part of the restaurant structure, and it set a pattern that continued through later chef-owner roles: building a place around a personal standard, rather than moving through anonymous posts. The work here was not only cooking, but defining a restaurant in public terms. From 2010 to 2016, he was chef-owner of Aria di Tacubo (Tokyo). The shift from one address to another shows a practice of revising format without losing control of the core sensibility. As Takubo said, "I've changed the style and concept of my restaurants from time to time." The line is plain, and so is the work it describes: adjust the frame, keep the hand. "Cooking starts from the stage of purchasing food materials." For Takubo, that is the operating principle. Honors
Daisuke Takubo trained at Osaka Abeno Tsuji Cooking College, then went on to work as chef at an Italian restaurant at Italian restaurant in Ehime. He later became chef-owner at Ristorantino Barca in Hiroo, Tokyo (2006–2010) and chef-owner at Aria di Tacubo in Ebisu, Tokyo (2010–2016). Today, Daisuke is chef-owner of TACUBO (since 2016).
