    Portrait of Danny Bowien

    i. Biography

Danny Bowien’s cooking is built around impact rather than polish: high heat, hard seasoning, and cross-cultural combinations that read clearly on the plate. At Mission Chinese Food, the work used spice, pungency, and informality as structure, with the Oklahoma-rooted preference for comfort folded into a louder, less conventional restaurant form. Danny has described the original project as a pop-up that never ended. “The original Mission started as a pop-up that never ended.” Danny has said.

    The Route

Culinary school provided the formal base before the San Francisco Bay Area restaurant work at Farina, where Danny Bowien cooked as a chef. The next phase moved through small-format entrepreneurship in San Francisco, California, with Mission Street Food and Mission Burger, both co-founded by Bowien and built around inventive cooking outside standard restaurant expectations. The New York City period centered on Mission Chinese Food, founded and owned by Danny Bowien from 2012 to 2022. The same operating language extended into Mission Cantina in New York City from 2013 to 2016, and a second location in Brooklyn from 2018 to 2022. Bowien remains co-founder of the group.

    The Work Today

The current reference points in Danny Bowien’s work remain the dishes that made the restaurant legible to cooks: thrice-cooked bacon and Kung Pao Pastrami. Their force comes from bold, pungent, and spicy flavors, with spice used for intensity and effect rather than restraint. The cooking is deliberately inauthentic, borrowing across forms without pretending to reproduce a fixed tradition.
