Danny Bowien’s cooking is built around impact rather than polish: high heat, hard seasoning, and cross-cultural combinations that read clearly on the plate. At Mission Chinese Food, the work used spice, pungency, and informality as structure, with the Oklahoma-rooted preference for comfort folded into a louder, less conventional restaurant form.
