The Climb

At the start of David Lai’s path, study at the University of California, Berkeley set the base, but the work moved quickly toward hospitality, where timing, service, and touch matter more than theory. He entered the trade hands-on as co-founder at Fish School in Hong Kong, then joined the opening team at Spoon by Alain Ducasse in Hong Kong, where precision is learned in the pressure of a new room finding its pace. Since 2014, he has been chef-owner of Neighborhood, a role that places his training and instincts into a daily standard of work.

Today

At Neighborhood, the food under David Lai’s name is built on the discipline of ownership as much as line work. The cooking aims for exactness without mannerism, using familiar flavors with care and finesse rather than display. Chicken Rice is the signature: it was featured at a six-hand collaboration as Kui Yuan Chicken roasted under the skin with ganba mushrooms and rice cooked like fried rice, then finished with fresh mushroom cream soup. That plate shows the method clearly, with roast and steam, richness and lightness, texture and comfort held together in one course. Spice-roasted baby lamb ribs are among the restaurant’s popular dishes, carrying heat and depth, while salt-baked local ruby snapper offers a more restrained counterpoint, popular through quiet confidence rather than spectacle.
