i. Biography
Eiji Wakabayashi is the General Manager and sommelier at ESqUISSE in Ginza, Tokyo, where he has worked since the restaurant opened in 2012. Eiji was appointed Manager/Chef Sommelier in 2012 and General Manager in 2019. He has also worked as a sommelier in restaurants in Japan and France. He received the Gault & Millau 2023 Best Sommelier of the Year award and the MICHELIN Guide Tokyo 2025 Sommelier Award.
