At Stellenbosch University, Emul Ross built the technical grounding that would carry into cellar work: study first, then the repetition and discipline of the trade. That transition continued at Graham Beck Wines in Franschhoek from 2008, where the work moved from classroom structure into the slower, more exacting demands of making wine that tracks site and season without overworking either. Since 2015, the scope has widened across Hamilton Russell Vineyards, Ashbourne, Southern Right Wines, and Hamilton Russell Oregon. Those concurrent roles place Ross in a broad operating range, but the through-line stays the same: one set of methods, applied across different labels without losing the discipline of restraint that defines the work.

Where They Are Now

At Hamilton Russell Vineyards, the cellar work is built around balance: parcel by parcel, structure against finesse, immediacy against what only settles in later. On the 2018 Hamilton Russell Vineyards Chardonnay, Ross described the result as greater than its parts, with individual parcels holding their own before the blend brings them into alignment. That is a useful marker for the style of work here — assembly over display, with the final wine allowed to register as complete without being overbuilt.
