The Climb
The discipline behind Fabio Perrone’s work was formed at the Oenological school of Alba, where study and practice were treated as the same task: learning to make decisions that hold up in the cellar. That kind of training does not produce shortcuts. It produces a working vocabulary for precision, and it is from that ground that he moved into stewardship and, eventually, ownership of Cascina Galletto. The progression reads as methodical because the work behind it was methodical: one step at a time, with technique carrying the weight.
Today
Ownership at Cascina Galletto places Fabio Perrone inside every stage of the estate’s practice, from vine to cellar. The governing idea is direct: “We have always preferred a natural approach, for better quality grapes and for a highly regarded final product.” Read plainly, it is a statement about restraint. The estate is managed with attention to what the vineyard can carry on its own, and with a preference for decisions that support the fruit rather than crowd it. That same logic extends into the cellar, where the winemaking is framed as a continuation of vineyard work rather than a separate performance. Cascina Galletto says it this way: “The winemaking respects the care of winegrowing by allowing native fermentations and eschewing any additives.” The craft position is clear: let the material lead, keep intervention limited, and treat the cellar as a place for preserving what was already built in the vines.
Signature
Fabio's signature wines include Moscato d'Asti DOCG Cascina Galletto, Barbera di Asti Superiore, Alta Langa DOCG, Dolcetto d'Alba DOC, and Langhe Nebbiolo. Together, they sketch a portrait of the estate’s range and identity: fragrant, structured, and rooted in place, each bottle carrying the imprint of a style that favors clarity and integrity over embellishment. These wines stand as the clearest expression of Fabio Perrone’s approach at Cascina Galletto, where craftsmanship is measured not by flourish, but by the confidence to let the wine speak for itself.
In Their Words “We have always preferred a natural approach, for better quality grapes and for a highly regarded final product.” “The winemaking respects the care of winegrowing by allowing native fermentations and eschewing any additives.”
