The estate's lineage was established, when Pouillon's grandfather began vinifying and bottling Champagne directly under the family name, transitioning away from an earlier family custom of growing grapes solely to sell to large commercial houses. From that point, winegrowing knowledge transferred from father to son across successive generations. Operating in Mareuil-sur-Aÿ, a village situated about ten minutes outside Épernay and shared with houses like Billecart-Salmon and Philipponnat, the domaine holds acreage on prime terroirs across the region, notably encompassing a significant proportion of Grands Crus parcels. Fabrice Pouillon assumed responsibility for the domaine at the close of the 1990s, taking over the wine estate across 1998 and 1999. In the cellar and vineyard, his technical work follows the traditional méthode champenoise, emphasizing strict estate control over grape sourcing and the core procedural steps of sparkling wine elaboration. At the domaine, bottling marks the crucial third phase following harvest, bringing together base wine preparation, assemblage, and the formation of effervescence through secondary fermentation. The production remains deliberately focused, yielding just over 50,000 bottles annually.

Today, Pouillon continues to serve as owner and winemaker at Champagne R. Pouillon & Fils (also known as Champagne Roger Pouillon). Working on site in Mareuil-sur-Aÿ, he oversees both vineyard maintenance and cellar operations, occasionally mentoring students from nearby viticultural schools during assembly line bottling sequences while maintaining small, targeted global allocations of the estate's grower bottlings.
