i. Biography
Fernando Martín is a chef from Alcalá de Henares who runs Eximio by Fernando Martín in his hometown. He trained at Le Cordon Bleu in Madrid and worked in the kitchens of Martín Berasategui and other Spanish restaurants before opening his own project. In 2024 Eximio received a Bib Gourmand from the Michelin Guide, and in 2026 Martín was recognized with the ACYRE Madrid Young Culinary Talent award.
