Fraser McKinley trained at Auckland before moving into cellar work as a winemaking apprentice at Torbreck and the Standish Wine Co. The apprenticeship years are where technique is tested against routine, and where a maker learns the discipline of paying attention to every stage that affects a wine’s life. Today, Fraser McKinley is winemaker and proprietor of Sami-Odi, a role that joins production and ownership in one set of hands. In practice, that means judgment is required at every point, with decisions made not only for the current vintage but for the line of wines a producer is building over time.
