    Portrait of Gaby Maeda

    i. Biography

Gaby Maeda’s path through the kitchen has been shaped by pace, control, and steady advancement. She began as a cook at Hiroshi Eurasian Tapas in Honolulu, where she learned the work from the line outward and absorbed the timing, restraint, and composure needed to move through service with consistency. In San Francisco, she externed at Gary Danko and later returned as lead line cook, a progression that reflected earned trust as much as promotion.

At State Bird Provisions, she continued to build that foundation as sous chef and then Head Chef, where precision and timing became central to the role. She now serves as executive chef at Friends & Family, carrying forward the same sequence of discipline, exacting standards, and calm judgment. Maeda’s approach to ingredients is defined by utility, contrast, and attention to full use. She has described watermelon as well suited to savory applications because it is flavorful and juicy, while the rind can absorb flavor and add texture.

That thinking also appears in the way she frames a dish inspired by Thai green papaya salad, where brightness and crunch are used as working elements rather than ornament. She has also said that the dish highlights both the fruit and the rind to create a virtually no-waste result. The method is direct: each part of the ingredient should earn its place. Her signature Watermelon Som Tam reflects that sensibility clearly.

The dish is fresh, structured, and built around ingredient use, with brightness and texture treated as tools of the craft. It captures a cook who values exactness as much as flavor and who turns line discipline into a style of leadership. The result is a body of work grounded in control, balance, and a practical respect for ingredients.
