i. Biography
Gilbert Cordeuil, winemaker at Champagne Cordeuil Père & Fille in Noé-les-Mallets, France, is tied to one plain accolade: Guide Hachette has given three stars to Cordeuil champagnes. The work behind that recognition is Organic Champagne production in the Côte des Bar, with Pinot Noir-led wines from the Aube and long cellar ageing used to reduce dosage needs and carry terroir purity.
The Honours
Guide Hachette awarded three stars for Cordeuil champagnes, a concise marker for a domaine whose identity is built on time in the cellar rather than cosmetic sweetness. In 2024, Cordeuil champagnes received a Mani Viti honor. In 2021, they received a triple Gold Medal at the Singapore Awards. The domaine’s certified organic farming dates to 2011. That credential sits alongside a family farming approach that had already relied on very few vineyard additions, using cover crops instead of chemicals before the conversion to fully organic agriculture.
The Craft
The house’s specialty is Organic Champagne production in the Côte des Bar, with a clear emphasis on Pinot Noir-led Champagne from the Aube in Champagne, France. At Cordeuil Père & Fille, that means fruit and cellar work are treated as a long project, not a quick release schedule. Extended ageing on the lees is central to the domaine’s style. The Extra-Brut is aged for at least 7 years, while the broader range sees long cellar ageing of 6 to 15 years depending on the cuvée; the aim is to let the Champagnes round out naturally, lower the need for dosage, and express terroir purity. A signature example is NV Champagne Cordeuil Extra Brut. It is made from 85% Pinot Noir and 15% Chardonnay, drawn from 2005/2006 fruit, aged on the lees for at least 7 years, finished with 4 grams per liter dosage, and bottled with low added SO2.
The Career
The vines Gilbert Cordeuil works were first planted by his parents in the 1950s. The family sold grapes to the local cooperative until deciding to bottle their own Champagne in 1971, a shift that turned the family’s farming base into an estate-led Champagne project. He took over the domaine in 1973. That date gives the work its long horizon: more than a single cuvée, the estate’s identity rests on decades of farming, cellar patience, and a style shaped by the Aube’s Pinot Noir. Today, he runs the Cordeuil Père & Fille estate jointly with his daughter Erlande Cordeuil. The name on the bottle reflects that continuity: a father-and-daughter domaine in Noé-les-Mallets working Organic Champagne with long lees ageing, low dosage, and a direct line back to family-planted vines.
