Sales, marketing, and buying at Alliance Wine Company gave Giles Cooke a trade-level view of wine before he moved into making it himself. That background matters in the cellar and beyond: it ties vineyard choices, production, presentation, and route to market into one working system rather than separate tasks. The shift marked a move from commercial roles toward direct involvement with wine under his own label, and it established the line that now runs through Thistledown Wines in McLaren Vale, Australia.

Today

Thistledown Wines is built around the combined responsibilities of founder, winemaker, and proprietor, and Giles Cooke uses that span to stay connected to the full cycle of a wine. His own description is plain and useful: “I love seeing the entire life cycle of a wine, all the way through from the vineyard to the end consumer and I’m privileged to be able to participate in pretty much every stage, at various times of the year.” It is the language of someone working across the process, not only at one point in it. Grenache sits within that remit as a variety and as a grower relationship. On that point, Giles Cooke has said, “I’ve also loved playing a small role in the resurgence of Grenache, and in helping to provide a sustainable future for many dedicated growers that otherwise may have pulled their vineyards out.” The craft here is as much about keeping vineyards in play as it is about what ends up in bottle.
