Since 1985, Henri Darnat has been the winemaker at Domaine Darnat, and the role has clearly demanded more than a seasonal presence. There is nothing hurried in the way he describes his approach. The cadence of his work feels measured, even resolute: a commitment to fruit at full maturity, and to a style shaped by experience rather than fashion. He remains the winemaker in Meursault, where the cellar work is guided by a practical, almost architectural sense of balance. On élevage, he says, "I also like to make my elevage in a mix of foudres and tanks, though there are of course barrels too." The phrasing suggests an approach that values texture and proportion, allowing different vessels to play their part in the life of the wine. He also sets a clear production target: "My target is for a modest yield of about 35 hl/ha." In that figure, too, is a philosophy of restraint, a preference for concentration and discipline over excess.
