The Path
Hugo Candeias built his early career through a sequence of kitchens in London and Barcelona, each role adding range to the same set of working tools. Chef stints at Dinner by Heston Blumenthal and Galvin at Windows in London, then Hotel Arts and ElBarri group in Barcelona, placed him in rooms with different standards, cadences, and dining cultures. The work across those cities reads less like a detour than a practical education in carrying technique from one service to the next without losing shape. Leadership came next through head chef roles at Hoja Santa and Niño Viejo in Barcelona, where Hugo Candeias moved from absorbing systems to helping define them. Lisbon extended that line of work through chef roles at The Art Gate and Dona, before chef executive at Grupo Paradigma widened the scope again. Across each step, the value was cumulative: technique, decision-making, and a way of thinking about food that could hold up in different kitchens. Today, the work is split between Ofício, where Hugo Candeias is chef, and Disco Taco, where he is chef & co-founder. One role sits in the day-to-day discipline of service; the other asks for authorship as well as execution. Together they show a practice that can stay grounded while still making room for invention.
