Hugo Muñoz is the chef behind Ugo Chan in Madrid’s Chamartín district, where he opened his first solo project in 2021 and built a Japanese-influenced, Spanish-rooted menu. Ugo Chan holds one Michelin star and two. Muñoz is the chef leading the restaurant.
