J.P. Singh is the executive chef of Bukhara at ITC Maurya, New Delhi, where he has been associated with the restaurant since 1991 after joining ITC in 1981 as a Demi Chef de Partie. He is widely identified with Bukhara’s North West Frontier cooking and its signature dishes, including Dal Bukhara, and has overseen the restaurant through decades of continuity and high-profile service.
