Since 2015, FOB Kitchen has been shaped around a clear, workable frame: an American diner format carrying Filipino comfort food without diluting either side. As chef and owner, Janice Dulce has kept the cooking legible at a glance and specific in the details, so the restaurant reads as approachable service and recognizable fare while still holding a distinct point of view.

The central idea at FOB Kitchen is direct: classic American diner structure, classic Filipino comfort on the plate. That pairing gives the menu its register. The food arrives with the plain-spoken clarity of diner cooking, but the flavor and composition stay rooted in Filipino memory and technique, so comfort remains concrete rather than generic. Three dishes show how that balance works in practice. Ensalada Talong combines eggplant, jicama, tomato, sea bean, cilantro, scallion, and rice cracker, moving between soft and crisp, bright and grounded. Tocino centers sweet-cured pork shoulder with garlic rice, a sunny egg, and mixed greens, using a breakfast format to carry a distinctly Filipino profile.
