    i. Biography

Chef, sommelier, and owner Jared Ian Stafford-Hill has built a career across cellar, line, and dining room without treating any one of them as separate disciplines. Since 2025, he has led Saint Urban in Manhattan’s Flatiron neighborhood, bringing to the room the working fluency of someone shaped by both wine and kitchen service. Before that, he apprenticed as a winemaker in Burgundy and held stagiaire posts at Craft, Gramercy Tavern, and Union Pacific in New York City, a route that joins cellar work, kitchen training, and ownership into one measured progression.

    The Climb

Stagiaire work is where the discipline shows, and Jared Ian Stafford-Hill’s early steps were made in kitchens that reward exact timing and clean execution. He began at Craft in New York City, then continued as stagiaire at Adour by Alain Ducasse in New York City, where the standards remained exacting. He went on to stagiaire posts at Gramercy Tavern in New York City and Union Pacific in New York City, each room adding another layer to a foundation built on rigor, pace, and attention to detail. That foundation widened into leadership. He became chef and sommelier and owner at Saint Urban in Syracuse, New York (2019–2025), a role that brought kitchen direction, service, and the bottle list into one operating frame. Today, he is chef and sommelier and owner of Saint Urban (since 2025), carrying that same combined approach into its next chapter.

    Today

In 2025, he brought the business to the Flatiron neighborhood of Manhattan and continues there as chef, sommelier, and owner. He added, “It was that it made sense to continue the legacy and the spirit of the restaurant that was there for 15 years, for another generation. The emphasis is on keeping an existing place in motion, not on remaking it for effect. That approach fits a career built from apprenticeship into ownership, with Burgundy cellar work and New York kitchens feeding the same operating logic.

In Their Words “It was that it made sense to continue the legacy and the spirit of the restaurant that was there for 15 years, for another generation.”
