French Culinary Institute gave Jason Wang the technical base that professional kitchens demand: repetition, discipline, and the habit of building flavor with control. That training sits under a career organized around one practical question: how to make food that carries place, identity, and memory without losing legibility. In 2005, he founded Xi'an Famous Foods, the venture that remains his signature achievement today. What started as a tight expression of regional cooking has become a name associated with the direct, savory force of the foods that inspired it.

Today

The present-day work of Jason Wang still runs on the same line: Xi’an translated for a broader public without stripping away its structure. The food does the bridging, moving between specificity and access, between a narrow regional vocabulary and a wider dining audience. That balance is the operating logic of Xi'an Famous Foods, and it is central to Jason’s place in contemporary Chinese food in America.

Signature
