The Path
In Santiago de Compostela, that formation stayed close to the essentials. It then carried into Culler de Pau in 2009, where the kitchen began to reflect a clearer relation to Galicia, with territory, sea, and land as the terms of the work.
The Work Today
In O Grove, Pontevedra, Spain, the cooking at Culler de Pau is organized around place before effect. As chef and owner, Javier Olleros works from Galicia as a frame of reference, letting the territory, the sea, and the land set the terms rather than treating them as decoration. That balance matters.
