The Climb
Formal study at Oenology school in Beaune gave Jean-François Ganevat the technical base that underpins disciplined cellar work: tasting, blending, and the repeatable judgement that turns fruit into finished wine. From there, the cellar at Domaine Jean-Marc Morey in Chassagne-Montrachet, Burgundy became the working ground where those skills were tested day after day. As cellar master there until 1998, he was part of the slow mechanics of production, where precision is built through repetition and attention to detail. In 1998, Jean-François Ganevat became winemaker of Anne et Jean-François Ganevat, the role he holds today. The shift gathered formal training and cellar experience into a single responsibility: making the decisions that shape a wine vintage by vintage, with the raw material, the timing, and the final character all resting on the same set of hands.
Today
Jean-François Ganevat’s work reads as the product of long technical formation rather than improvisation. The Oenology school in Beaune established the language of the craft, and the years at Domaine Jean-Marc Morey in Chassagne-Montrachet, Burgundy reinforced the habits that matter in the cellar: patience, consistency, and control. That combination tends to produce wines built with structure, while still leaving room for nuance in the finished cuvées. For Jean-François Ganevat, the craft shows up less as declaration than as accumulation, with each stage adding another layer of method to the work. In that sense, the wines are the record of the practice.
Signature
Jean-François’s signature wines include Sous Voile, Les Chalasses Marnes Bleues, and La Gravière. Each name carries its own kind of resonance, and together they sketch the contours of a winemaking identity that is attentive, specific, and recognizably his.
