Jean-François Rouquette

Jean-François Rouquette, an Aveyron native who grew up in the Paris region, is the Executive Chef of the Michelin-starred Pur' restaurant at Park Hyatt Paris-Vendôme, where he has led the kitchens since 2005 and earned a star within three years. His career includes formative roles at prestigious establishments such as Hôtel de Crillon, Grand Véfour, La Palme d'Or at Hôtel Martinez in Cannes, and Taillevent, before owning and cheffing at La Cantine des Gourmets (2006, one Michelin star) and Les Muses at Hôtel Scribe (2003). He crafts a refined, seasonal cuisine inspired by his Aveyron roots, Mediterranean influences, and global travels, emphasizing light techniques without cream or butter.
