i. Biography
Jeff Maxfield came to Walrus Rodeo in Miami in 2023 with a working grip on wood-fire American cooking and the sort of experience that only comes from long hours in line kitchens and formal study. The move placed an established cook into a room built for heat, smoke, and pace. Seattle remains part of the frame, but the work in Miami is the present tense of a career that has moved from school to executive leadership without shortcuts.
The Climb
Training at South Seattle Community College gave Jeff Maxfield the technical base that later supported his work as Executive Chef at SkyCity Restaurant in Space Needle, Seattle (until 2013). The path from classroom to service kitchen is plain here, but the value is in the accumulation: discipline from school, repetition from service, and the demands of a professional line sharpening the approach. That sequence set the terms for a rise that has been steady rather than theatrical. By the time he became chef/partner of Walrus Rodeo (since 2023), Jeff Maxfield had already built the kind of background that travels well. Miami did not require a reinvention so much as a different application of the same fundamentals. At Walrus Rodeo, wood-fire cooking reads as a direct continuation of that background, shaped by heat and timing rather than ornament.
Today
Wood-fire American cooking is the working center of the Miami restaurant. The fire defines the room as much as the plate: smoke, immediacy, and a clear line between product and technique. In Jeff Maxfield’s hands, the food is set up to be legible, with char and restraint doing the heavy lifting.
Signature
Jeff's signature dishes include carrot tartare, charbroiled oysters, lasagna, and woodfired sourdough pizza. The range shows a kitchen that can move between smoke, brightness, richness, and the steady pull of the oven. It is a practical spread, but not a narrow one, and it points to a cook who works across formats without losing control of the fire.
In Their Words “Everything, from the curriculum at South to the instructors we had, it was so relevant to the business.” “A lot of that discipline came from South.”
Recognition
Jeff Maxfield has pointed to South as the place where kitchen discipline took shape. That discipline remains the through line in his work: a structure built early, then carried into service, leadership, and the demands of a fire-driven menu.
