Training at SENAC gave Jefferson Rueda a base in discipline before the work moved outward through kitchens in São Paulo and Europe. The sequence that followed — chef at Madeleine in São Paulo, Brazil, chef at Parigi in São Paulo, Brazil, chef at Pomodori in São Paulo, Brazil, and chef at Attimo in São Paulo, Brazil — reads as steady accumulation, each room adding experience to a practice that kept narrowing toward a clearer point of view. Work at El Celler Can Roca in Europe, Can Fabes in Europe, and Santi Santamaria in Europe widened the frame without changing the core terms: technique, ingredient discipline, and attention to how a kitchen functions when the standard is exacting. Since 2015, Jefferson Rueda has been chef-owner of A Casa do Porco, where those layers of training, repetition, and sourcing converge in one address.
Where They Are Now
At A Casa do Porco (São Paulo), the cooking is built from a narrow set of materials handled with intent: pork, vegetables, and the farm that supplies them. Porco D.O.C, the tasting menu, brings pork and vegetables from Sítio Rueda in São José do Rio Pardo onto the plate, tying the restaurant’s menu structure directly to a farm-based source. The logic is straightforward and legible to any cook: the menu reflects what the ground can support, and the kitchen works from that constraint rather than against it. The house identity is also carried by dishes that anchor memory and repetition. Porco San Zé is a house classic served with pork sausage, beans, banana tartare, farofa and whatever came from the garden, a composition that is built for abundance but still controlled in its parts. Another named marker of the kitchen is torresmo com goiabada picante, described as one of his most noted creations. In that dish, the relationship between richness and brightness is explicit, and the contrast is doing the work rather than ornamenting it. The system behind the food matters as much as the food itself. Rueda has said, “My role is to connect and educate the various points of the chain.” At A Casa do Porco, that position reaches from sourcing to menu design to the plate delivered to the guest.
